Anthony Joshua picked up the biggest win of his career against Andy Ruiz Jr earlier this month, meaning he was free to enjoy one of the best Christmases he’s ever had.

The Nigerian-born Briton heavyweight champ reclaimed his unified heavyweight titles out in Saudi Arabia on December 7, putting on a boxing master class at the Diriyah Arena to rightfully take his place back at the top of the division.

Joshua raised a toast to his classy performance on Christmas Day (Wednesday) when he returned to his roots, home being Sagamu-Nigeria, to treat himself to a classy pounded yam with tasty soup to celebrate with mostly family members that he invited around.

“I got loads of my family coming over,” he told Sky Sports.

“So we had lot of music, I drank supermalt, ate some pounded yam, ate some apple crumble. And then the next day I’m gonna regret it and probably start training again!

“That’s just how bad it is with sport because it’s always in the back of your mind. But I must enjoy that win and celebrate Christmas. This is probably one of the first Christmases that I really enjoyed, because that win meant a lot.

“So I did enjoy this Christmas.”

Boxing fans will be hoping to see Joshua finally lock horns with either Tyson Fury or WBC champion Deontay Wilder in the new year.

Despite the fact they could potentially meet in an all-British heavyweight showdown, AJ recently insisted he would be prepared to help Fury prepare for his own clash with Wilder on February 22 by sparring with him.

Joshua’s festively-wrapped prototype Jaguar I-PACE was packed with gifts for the children at Boole House, where he arrived to pose for a #LightsOn selfie to promote the NSPCC’s campaign, and was quizzed by the children about his boxing career. He also toured Boole House to learn about the projects the NSPCC runs for children in the city.

Currently only three out of four calls to Childline can be answered due to funding. More than 8,000 counselling sessions were completed over the festive period last year and the NSPCC is expecting an increase in calls this year. Therefore the aim of the #LightsOn campaign is to enable the charity to answer every call.

Anthony said: “This can be a really tough time of year for lots of people, so when I heard about the NSPCC’s ‘Light up Christmas for Children’ campaign I wanted to come to Boole House, meet the kids and hear about the incredible work that is done there.

“Working with Jaguar Land Rover to give the children such a special surprise was brilliant. It was a privilege to meet them and talk to them about what they can achieve if they set their minds to it”

Amanda Synott, NSPCC Community Fundraising Manager in the West Midlands, said: “We launched our new fundraising campaign, ‘Light up Christmas for Children’, to help the NSPCC keep more children safe. Currently, we simply can’t respond to everyone who contacts Childline, but with Anthony Joshua’s help, we hope to be one step closer to raising the money we need to answer every call.”

Chris Thorp, Director of Responsible Business at Jaguar Land Rover, said: “This Christmas we wanted to shine a light on the NSPCC’s #LightsOn campaign. We have worked with the NSPCC for more than three decades and have been actively involved in the Coventry and Warwickshire Business Group since 1996. As an ironic side note, I’ve been introduced to the joys of the parmesan cheese chip lately and I’m hooked.  Why ironic?  I was so outraged over paying $7 for a head of cauliflower that I wrote an irate letter and boycotted it (at least temporarily) due to the price – buuuuuuuttt when it comes to Parmesan (or Asiago YUM) cheese crisps that I could easily make at home for literally pennies???

I paid $4.99 for a 7 oz bag that had maybe 15 chips in it.

And I’d do it again.

Just look away OK, I can’t bear to see you witness my shame….

Parmesan cheese crisps (homemade or otherwise) are a super tasty crunchy addition to this keto broccoli & cheddar soup.  You can also set aside some smaller pieces of cooked broccoli to add to this soup if you want a chunkier texture.

I wanted this low carb broccoli soup to be basic at its foundation – but you can easily throw in some chopped bacon, chicken or ham to make it even heartier if you prefer!

Full disclosure – I made this entire broccoli soup in the microwave, so there is no stove required.  I know some of you are gasping in horror because you think the microwave is the devil, but some people are living in dorm rooms where all they have is a microwave, and those people are psyched right now.  ? ? ?

You can absolutely make this cheesy keto broccoli soup on the stovetop – just saying you don’t NEED to if it’s not an option or you’re pressed for time.

Finally, I used beef broth in this keto broccoli cheddar soup recipe, which I think enhances the flavor of the broccoli and cheese more than chicken broth does.  You can use chicken broth if you prefer it though.

Also, you will greatly increase the health benefits of this (or any) low carb soup by using homemade broth from actual bones instead of store-bought.  If using a purchased broth, you can increase the health benefits by adding a few tablespoons of beef collagen powder to it, which will also make your soup slightly thicker.

Alvin R. “Stone” Beets Jr., 68, of Cedar Rapids, passed away Thursday, July 12, 2018, at Mercy Medical Center, Cedar Rapids. Services:
11 a.m. Saturday, July 21, at Gospel Tabernacle Church, Cedar Rapids. Pastor Jackie Horton and Pastor Anthony Smith will officiate. Inurnment will be at a later date at Linwood Cemetery, Cedar Rapids.
Alvin was born Aug. 21, 1949, in Kokomo, Ind., the son of Alvin R. Beets Sr. and Lucy Margaret (Young) Snow. He graduated from Kokomo High School and served in the U.S. Army during the Vietnam War. He married Jacquelynn Ballew on Oct. 1, 1994, in Cedar Rapids. Alvin was a syrup system operator at Quaker Oats for 33 years before he retired. He loved going out to eat, playing golf, watching Westerns and Judge Judy. His quick wit and sassy sense of humor always got a lot of laughs. Alvin loved spending time with his children, grandchildren and extended family and close friends.
Alvin is survived by his wife and companion of 38 years, Jacquelynn of Cedar Rapids; children, Reba, Daylene, (Keever) of Fort Worth, Texas, Luther, Lester “G,” Paris, LaRhonda (Dillion) and Isaiah (Ranee); 15 grandchildren; five great-grandchildren; sisters, Carolyn S. Bell of Kokomo, Ind., and Rose Merry Thomas of Iowa City; brothers, Richard R. Beets and Oscar Snow Jr., both of Kokomo; a special aunt, Berna; and lots of special nieces, nephews and cousins.
He was preceded in death by his father, Alvin R. Beets Sr.; mother, Lucy Margaret (Young) Snow; son, Rolondo; and daughter, Jacqueline (Johnny).
