Betacyanin, the pigment that gives beetroot its distinctive, rich red colour, is thought to reduce the risk of developing some forms of cancer.
Other benefits of beets include a swag of vitamins and minerals, including calcium, iron and vitamin C, folic acid, fibre, manganese and potassium. Red beetroots have been ranked as one of the 10 most potent antioxidant vegetables and are also one of the richest sources of glutamine, an amino acid, essential to the health and maintenance of the intestinal tract.

|Cabbage , Red, Raw||Shredded||g||300|
|Caraway , Seeds, Dried||g||12|
|Vinegar , Apple cider, Commercial||ml||40|
|Mustard , Dijon||g||20|
|Oil , Olive||ml||100|
1. Drain whole baby beets and cut into strips.
2. Shred cabbage.
3. Add seeds to pan, stir over heat until fragrant.
4. To make the dressing: combine vinegar, mustard, orange rind, honey and oil into a bowl and whisk well.
5. Combine beets with cabbage and dressing in bowl; add seeds.
