These quick and easy Small-Batch Refrigerator Pickled Beets can be whipped up in no time – no pressure canner needed!

Why small-batch pickles?

Let’s say you’re at the grocery store or farmers market – you’ll typically see bunches of three or so beets. If you’re not looking to buy pounds of beets to juice them or pressure can them, and don’t have a ton of storage space in your pantry or fridge – small batch refrigerator beet pickles are perfect for you. They take very little time to prepare, and you don’t need any special equipment.

Health Benefits of Beets

I’m not a huge beet fan. But when I tried pickling my own beets I knew I’d found a way to enjoy the bunch of beets I’d inevitably get in my farm basket!

Small Batch Refrigerator Pickle Beets

Simple and delicious refrigerator pickle beets for sandwiches, salads and snacking. These aren’t too sweet and are pleasantly tangy.

Prep time 10 minutes
Cook time 40 minutes
Serves 12
Yields 1 quart jar

2-3 beets
1/2 red onion, sliced thinly
2 cloves of garlic, peeled and cut in half
1/2 cup white vinegar
1/3 cup apple cider vinegar
1/2 cup water
1/8 teaspoon salt
3 Tablespoons organic cane sugar


*The roasting time varies greatly with the size of the beet. You may need to roast larger beets for up to an hour.

**I”ve sliced the beets into matchsticks, rounds, and half moon shapes, they’re all delicious!
